  • 1 onion, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1 green chili, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon ground coriander
  • Salt to taste
  • Fresh coriander leaves, chopped
  • Oil for frying

Instructions:

Prepare the Dough:

  1. In a mixing bowl, combine the flour, salt, and oil.
  2. Gradually add water and knead the mixture to form a smooth, firm dough.
  3. Cover the dough with a damp cloth and let it rest for 30 minutes.

Make the Filling:

  1. Heat oil in a pan, add cumin seeds, and let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in ginger-garlic paste and green chili, cooking until the raw aroma disappears.
  4. Add turmeric powder, garam masala, ground coriander, and salt.
  5. Mix in boiled and mashed potatoes along with peas, ensuring an even distribution of spices.
  6. Garnish with fresh coriander leaves and set the filling aside to cool.

Assemble the Samosas:

  1. Divide the rested dough into equal portions and roll each into a ball.
  2. Roll out each ball into a thin oval or round shape.
  3. Cut the rolled dough in half, creating two semi-circles.
  4. Form a cone by sealing the edges of the semi-circle with a water-flour paste.
  5. Fill the cone with the prepared potato-pea filling.
  6. Seal the open edge of the cone, creating a triangular samosa.

Frying the Samosas:

  1. Heat oil in a pan or deep fryer to medium-high heat.
  2. Carefully slide the samosas into the hot oil, frying until golden brown and crisp.
  3. Remove excess oil by placing the samosas on a paper towel.
